Mondays are one of our meat free nights. Last night my family devoured this meal so I thought I'd share it with you. Healthy and satisfyingly tasty!
Recipe
tsp of coconut oil
diced onion
1 cup red lentils or green
1 med sweet potato in cubes
I large carrot chopped
2 cloves garlic
inch grated ginger
1/2 tsp turmeric
1 tsp curry powder ( or less!)
1 tsp ground ginger
pepper
800ml organic veg stock
1/2 cup coconut milk
Saute onion, add lentils, potato, carrot, spices garlic etc and stir to mix. Add broth and cook for 25 mins or until the lentils and sweet potato are cooked. Stir in coconut milk and serve. I served it with organic red and whit quinoa.
